Meanwhile in a large skillet saute the peppers and onion in butter until tender. Let the sausage rest for a few minutes while the veggies cook and then slice the sausages into 1-2 inch pieces the size is a personal preference. Cook 4 minutes or until thoroughly heated.
Slice into 14 inch thick round slices. Sauté onion and next 3 ingredients in hot oil in Dutch oven over medium-high heat 5 to 6 minutes or until vegetables are crisp-tender. Cook 5 minutes or until browned stirring to crumble.
