Nyt Cooking Chicken Lemon Soup
This soup has all the classic flavors celery carrot parsley but has been updated for todays cooks who cant easily buy the stewing hen and packet of soup vegetables that old-fashioned recipes used to call for.
Nyt cooking chicken lemon soup. Once hot add the onion leeks celery and carrots. Add chicken thighs and sear until lightly browned on one side about 3 minutes. Add the remaining garlic and leeks bulgur and salt to taste.
In a small bowl combine the remaining butter and the flour. Add the garlic sage thyme lemon zest salt and pepper saute for 30 seconds. Reduce the heat cover and simmer 20 minutes until the grains are tender.
Reduce heat and simmer until chicken is fork-tender about 1 hour. Place the chicken carrots onion and lemon in a 5- to 6-quart slow cooker. Place the lemon slices on top and sprinkle with chopped parsley.
Add 1 tablespoon olive oil to the pot. Add the chicken and chicken broth to the pot. Add remaining minced herbs garlic ginger turmeric mixture and stir through.
Drain off any fat. 1 pound dried chickpeas soaked overnight and drained. Flip chicken so its raw side is down and add stock salt ginger and tumeric.
