Nyt cooking pasta vodka. Gently mix penne until butter is melted. Scrape to deglaze the pan then let the vodka cook until reduced by half about 5 minutes. Stir in the heavy cream and 1-12 tsp.
Add the cooked pasta along with the parmesan cheese. Add the vodka and cook for about 2 minutes to mellow the alcohol. Mix until fragrant about 45 seconds then stir in the tomato paste.
Quickly stir through the cream to combine then remove from the heat. Vodka will add a boozy kick to most recipes but if the vodka is cooked the alcohol will burn off. Add the onion and cook stirring occasionally until softened about 6 minutes.
Remove the center knob on the lid to allow steam to escape and place a towel over the lid to prevent splattering. Stir the vodka into the pan and simmer for 2 minutes. In 1 batches transfer the sauce to a blender and add the cream and vodka.
2 tablespoons finely chopped curly parsely. Slowly starting on the lowest setting and increasing every few seconds blend until completely smooth about 30 seconds. Stir and bring to a simmer.
Im assuming you mean for tomato sauce. Just before draining remove 1 12 cups of the pasta cooking water. Toss over medium heat until the pasta has absorbed some of the sauce about 3 minutes.
